‘CABIN’ FEVER HEATS UP AT HOCKLEY VALLEY RESORT
Hockley
Valley Resort's new signature restaurant, cabin,
is introducing a new standard for regional cuisine in the Hills of
Headwaters with a weekly rotating menu and a permanent menu dedicated to fresh
ingredients and local fare.
Under
the direction of Chef de Cuisine Michael Potters, the new 2,600 square foot
restaurant is named in honour of the first structure built on the property in
1865. The open-concept restaurant design blurs
the lines between kitchen and dining room, with seating for up to 70 guests,
including an interactive Chef’s Table in front of Chef Potters’ cooking area, a
semi-private dining area, and an intimate dining room.
“The inspiration behind the rotating menu is to offer guests
a truly seasonal culinary experience,” said Potters. “Our proximity to local
farmers and food purveyors, combined with our bountiful on-site garden allows
us to serve the freshest possible food with a low ecological footprint.”
Chef
Potters will be supported by Hockley’s new Director of Restaurants, Sommelier
Corey Ladouceur.

Corey Ladouceur Joins Hockley Valley Resort as Director of Restaurants
Renowned Sommelier Corey
Ladouceur has joined Hockley Valley Resort as Director of Restaurants. Ladouceur
will oversee the culinary experience of restaurant 85, and the newly opened cabin at the famous hotel, golf and ski
destination located one hour from downtown Toronto.
Corey Ladouceur began
his career in Windsor, ON working as Sommelier and Dining Room Manager at Il
Gabbiano Ristorante. He also honed his skills in the U.S. at Café Cortina in
Farmington Hills, MI and 30 Degree Blue at the Marriott Resort in Panama City
Beach, FL. Upon moving to Toronto, Ladouceur was resident Sommelier and
Restaurant Operations Manager at the exclusive Granite Club, and most recently
as Food and Beverage Manager and Sommelier at the private downtown The Spoke
Club.
“Corey’s rich experience
is going to be a tremendous asset to all our establishments,” said John Paul
Adamo, President and Owner at Hockley Valley Resort. “With cabin set to open this week, Corey will play a key role in defining
the guest experience.”
Ladouceur enrolled with
the International Sommelier Guild in Toronto in 2002, receiving top honours
with his Sommelier designation in 2004. He is currently pursuing his Master
Sommelier designation, a title bestowed to only three other Canadians. In
addition to being one of 12 judges in the All Canadian Wine Championships, Ladouceur
was selected to be one of 27 Master Sommelier candidates in the intensive
“Master Napa Valley” study session.

Ladouceur is the newest addition

Michael Potters signed on as Executive Chef and Chef de Cuisine, respectively.

Hockley Valley's 'cabin' Re-invents Rustic Elegance
Construction is underway at Hockley
Valley Resort for cabin, the newest culinary addition to the famous hotel, golf and ski
destination. Under the direction of acclaimed Canadian Chef Michael
Potters, cabin will open its doors on December 17.
Named in honour of the first structure built on property in 1865, cabin will draw inspiration from the picturesque and romantic countryside in
the Hills of Headwaters region. The 2,600 square foot space will
combine rustic and modern décor elements, including reclaimed hard-wood
floors and wooden beams from an old barn, and a 16 foot steel and glass
chandelier.
"The concept for cabin marks an exciting and significant stage in the Resort's evolution,"
said John Paul Adamo, President and Owner at Hockley Valley Resort. "cabin will allow guests to connect with chefs, enjoy a diverse sampling of local
fare, and experience the region's beauty."
The culinary experience will be defined by a farm-to-table philosophy on
food. Chef Potters' à la carte menu will celebrate the best of local
cuisine, using only the freshest ingredients from the Resort's two-acre
fruit and vegetable garden, seasonal preserves, and fare from local
farmers and suppliers.

Golfers swing for a cause at Hockley Valley Resort's Annual Charity Event
For the 16th consecutive year, Hockley Valley Resort held
its signature From the Heart of Hockley Charity Event, raising $60,000 for local
charities with a day of golf and spa-filled fun.
Funds raised at this year’s event
will support four very worthy causes: The Headwaters Health Care Centre, Caritas, Meagan’s Walk and
the Ontario Track 3 Ski Association. The Headwaters Health Care Foundation will receive nearly $20,000 of the funds raised to
purchase a birthing bed and four transport wheelchairs. To date, more than $550,000
has been raised in support of various local causes.
“For 16 years, our annual
charity event has helped to raise funds, awareness and hope for some very deserving
local causes,” said John Paul Adamo, President and General Manager of Hockley
Valley Resort. “We are honoured to be a part of the tight-knit Hills of
Headwaters region, and to give back to the community in any way we can.”
The success of Hockley’s 16th
Annual Charity Event was made possible by the support of the Resort’s amazing sponsors, suppliers and business

Nearly 240 people participated, enjoying a day of golf on the green or
relaxing in the spa, followed by a cocktail reception and dinner. The event

fruit and vegetable garden, and refreshed spa area.

Renowned Chef Michael Potters Joins Culinary Team At Hockley Valley Resort
Acclaimed Canadian chef Michael Potters
will join Hockley Valley Resort as Chef de Cuisine, effective November 1. Potters
will lead the culinary team of a new high-end leisure restaurant at the
Resort, as part of an ongoing series of changes to the iconic hotel,
golf and ski destination located one hour from downtown Toronto.
The new and yet-to-be named restaurant, being built especially for
Potters' arrival, marks the exciting next stage of Hockley's evolution.
In celebration of their 25th anniversary, the Resort's recent $5 million transformation included the
addition of three new restaurants: Babbo, Tavola and Restaurant Eighty
Five, named to commemorate the year Hockley first opened its doors.
"The Resort has undergone some dramatic changes to ensure that food
defines the guest experience at Hockley," said John Paul Adamo,
President and General Manager of Hockley Valley Resort. "I am honoured
to welcome Michael to the Hockley family and am confident his culinary
expertise, vision and reputation will help raise the profile for both

Committed to an authentic, fresh and local approach to food, Hockley's

more than 80 per cent of the produce for the constantly evolving fresh
fare of the resort's restaurants, with additional menu items sourced
from local farmers and food producers.

to cooking," said Potters. "I am excited to bring my passion for

For over two decades, Michael Potters has been linked with some of
Toronto's finest restaurants. Upon moving to Prince Edward County in
2003, Potters first opened the Milford Bistro, followed by the
highly-respected Harvest restaurant in Picton, rated among the top ten
dining rooms in Canada by En Route Magazine. Most recently, Potters
worked at Angéline's Restaurant and Inn in Bloomfield.
Hockley Valley Resort is located in the Hills of Headwaters, the highest
